Simon is a lawyer and candidate for a PhD at Western Sydney University specialising on the international protection of journalists. He has also worked for the ABC Radio National. He has advised the Human Rights Council of Australia, Australian Lawyers for Human Rights, the United Nations Office of the High Commissioner for Human Rights, the International Criminal Tribunal for the Former Yugoslavia, the Diplomacy Training Program and other organisations on international human rights and criminal law. He was a Lecturer-in-Law at the University of New South Wales and Western Sydney University and a Legal Officer at the Royal Commission into Institutionalised Responses to Child Sexual Abuse. He has worked on Australian Research Council Grants for the University of Technology, Sydney, and was a Senior Research Assistant working on the biography of Justice Michael Kirby.
